I once left a batch of habanero sauce fermenting way too long and it nearly exploded in the pantry. Definitely learned the hard way about gas buildup! Burping those jars is a must.

- Use airlocks or vented lids
- Don’t overfill jars: Leave headspace so bubbling doesn’t push liquid out.
- Keep jars in a cool, stable spot: Warmer temps speed fermentation and can increase pressure.
- Check daily during active fermentation: Especially in the first week when activity is strongest.
