Exploding batches and safe fermenting tips

I once left a batch of habanero sauce fermenting way too long and it nearly exploded in the pantry. Definitely learned the hard way about gas buildup! Burping those jars is a must.

A few tips I picked up along the way:
  • Use airlocks or vented lids
  • Don’t overfill jars: Leave headspace so bubbling doesn’t push liquid out.
  • Keep jars in a cool, stable spot: Warmer temps speed fermentation and can increase pressure.
  • Check daily during active fermentation: Especially in the first week when activity is strongest.
