go-to mild varieties for 2025 season

Trying to branch out a bit from the heat side of things and grow some mild peppers this season. What I really need are varieties that kick in early and crank out a ton of pods, since I don't want to be waiting until October for harvest. I've mostly grown jalapeños and cayennes before, so I'm new to the "mild and prolific" category. Googling just gives me the usual bell pepper recs, but I'm looking for something with more flavor than the grocery store standard and ideally something that's reliable in a small backyard garden. What are you folks planting in 2025 that fits the bill? Any favorites that pump out fruit early without babying them too much?

Try Anaheim peppers. They're mild with a nice earthy flavor and they can produce a lot of fruit. I had Jimmy Nardello peppers too, which are sweet and have a delicate flavor that is great for frying. For a more unique option, Shishito peppers are a great choice. They are usually very mild and are a lot of fun to grow because you can pick and eat them right away. A lot of these varieties are known for being easy to grow and a good choice for a backyard garden.

These are the peppers that I pickle: 'Sport' (cut into small rings), and 'Sugar Rush Stripey' (whole or rings just before turning orange).
These are the peppers that I ferment: 'Manzano' (for Cortido or salsa), and 'Hawaiian' - typically in a puree of turmeric, ginger, garlic, lime juice, ... (really good on hard boiled eggs).
These are the peppers that I like for a chili powder base: Chilhuacle Negro, and Chilhuacle Amarillo.
This is the pepper I prefer for red pepper flakes: 'Indian PC-1'
