I tried a Trinidad Scorpion pepper for the first time at a local food festival. I expected pure heat, but there was this fruity, almost citrusy kick before the fire hit. Has anyone else noticed that sweet note, or was my tongue just in shock?
I know someone who eaten Scorpions straight at contests (definitely a bad idea). They actually have a real fruity flavor at first, then the heat kicks in fast. Judges love that mix of flavor and heat in sauces.
