I picked up a gallon of Urfa biber flakes this summer. So far, I've only used them in two different ways. The first is as part of the base flavor for my chili recipe. The other was adding them to secondary for a high ABV mead that used 'Coastal Buckwheat', 'Black Sage', and 'Avocado' honeys in primary and backsweetened with more 'Coastal Buckwheat'. The primary ingredients also included dates, figs, and some spices. Besides the Urfa biber in secondary, there were additions of ginger, cinnamon sticks, and other minor spices. The estimated ABV is 15.5% to 16% with a nice balance from the residual sugars. The Urfa biber added a slight, earthy, and smoky profile that complements the dates, figs, and other ingredients.
