Hot sauce rookie

So I recently blended up some habaneros, mango, and a splash of vinegar, then decided to ferment it. Now my fridge smells like spicy fruit doom. How long do you usually let it sit before bottling? And do you strain or leave it chunky?
 
Hey @jalapen0village I usually go for about two weeks before bottling. I strain mine because I like it smooth. But if you’re into pulp, leaving it chunky works too. Did you use an airlock or just a lid?
 
@jalapen0village I usually let it sit for more than 2 weeks, mostly 3 weeks. it'll have a deeper, funkier, and complex flavor.
once you have the consistency you want, you can pour the hot sauce into clean bottles.
Since your hot sauce is still actively fermenting, it will continue to produce gas
