Fermented mild peppers?

My kids love the idea of homemade sauce but don't want it super spicy. Are there any mild peppers that still taste great fermented? I'm hoping to make a family-friendly batch. thanks for any suggestions!
 
Love that your kids are into homemade sauce! Mine helped me make a batch with red bell peppers and a few mild jalapenos, the seeded ones. It came out tangy and flavorful, not spicy at all. Fermenting really brings out the sweetness which is perfect for picky eaters.

other than bell pepper, I think you should try banana pepper or maybe anaheim, they're very mild. I think it would be great for you and the kids
 
my kids love my roasted red pepper pasta sauce. and you can also try to make a smple bell pepper puree, just simmer chopped bell peppers in olive oil until tender, then puree them into a simple sauce seasoned with salt and pepper. we use it as a dip, a sandwich spread, or a pasta sauce
